Since 1995 when he opened the 39-seat Metropolis Cafe and 1998 when he opened Aquitaine Bar á Vin Bistrot, Seth Woods has been steadily shaping his Aquitaine Group into a respected local operator of fine-casual restaurants. Growing his brand Woods took on his partners, Matthew Burns and Jeffrey Gates, who together own and operate Aquitaine Chestnut Hill ( 2000) , Aquitaine Dedham ( 2009), Gaslight Brasserie (2008), Union Bar & Grille (2003) and the lunch-only Cafe Green Light (2008).

Tim is a New Englander who grew up in New Hampshire.  He got his degree in geology and went off to work for Mobile Oil in California. After a couple years he found himself in Kansas city and took his first job cooking at a little joint called Classic Cup. The cooking bug got him and the next thing he new he moved back to New England to work under Chef Ken Oringer & Chef Chris Schlesinger for a number of years.  The next chapter for him was opening his own place Perdix JP where he he won Best of Boston for 2 years as Best Neighborhood Restaurant.  He moved Perdix to the South End for another 3 years where he was featured in Bon Apetit Magazine but with the birth of his child he decided to take a break from the crazy demand of being a chef owner.  He then entered a whirl wind of restaurant openings & rebrands as Executive Chef: Bouchee, Atlantic Fish Company, Darryl’s Corner Bar & Jerry Remmys.  He then spent 4 award winning years at the Museum of Fine Arts as the Executive Chef.  We couldn’t be happier to have him on our team!

Adam is originally from New Jersey and went to University of Pittsburgh and where he got his degree in English writing.  After college he moved to NYC when he won a scholarship from New York Film Academy and received his Certificate in Film Making.  While in the city he worked for Chef Todd English for 3 years before joining the Morton’s steak house team.  He managed for 3 years in Atlantic City before his 2 years in Boston’s Seaport District. He was AGM to the team that opened Bostonia Public House, before joining us here Aquitaine Boston.
